MBY 582:1-9 Tefilos of RH and Aseres Yemei Teshuva (abridged) (Excerpted from KSA (Metzudah Edition) Siman 129 “Laws of Rosh Hashana”, pp. 283-288)

1) In all the Kaddish prayers recited from RH through YK, you should repeat the word ‘le’eila’ (He is higher); thus you should say ‘le’eila (u)le’eila’ (He is exceedingly higher)… Since the Kaddish must contain twenty-eight words (from Yehei Sh’mei… until be’alma) and the entire year you say ‘le’eila min kol birchasa’ you say now ‘le’eila (u)le’eila mikol birchasa’ (i.e. you add one word and subtract one word to keep it at 28!)

3) All through the year you say in the Shemoneh Esrei, ‘haEil haKadosh’ (the Almighty, the Holy One) and ‘Melech ohaiv tzedaka u’mishpat’ (King, Lover of righteousness and justice), except from RH until after YK, when you must say instead ‘haMelech haKadosh’ (the King, the Holy One) and ‘haMelech haMishpat’ (the King of justice), because on these days the Holy One, blessed is He, manifests His dominion by judging the world. If, by mistake, you said ‘haEil haKadosh’ , or if you are in doubt whether you said ‘haEil haKadosh’ or ‘haMelech haKadosh’: If you became aware of the error within the time needed to utter a short greeting (3 words: ‘Shalom Alecha, Rebbe!’) you should say ‘haMelech haKadosh’ and you need not start again from the beginning. But, if you only became aware of it after the time needed for a short greeting, you must repeat Shemoneh Esrei from the beginning, even if in doubt! [Footnote #2: (Similarly), if you began the next bracha, even if it still within the time needed for a short greeting, you must start from the beginning of Shemoneh Esrei. Footnote #5: If on RH or YK there is a doubt if you said ‘haMelech haKadosh’, you need not repeat the Amida, since you can assume that you said it as part of the special prayers of Yom Tov!] … But at ‘haMelech haMishpat’, (one) need not repeat even that bracha, since he mentioned the word Melech (King) in that bracha…

4) In the Maariv service on Friday night, in the abridged form of the seven brachos in ‘Magen Avos’ (“Shield of our forefathers”) you also say, instead of ‘haEil haKadosh’, the words ‘haMelech haKadosh’…

5) If you forgot to say ‘Zachreinu’ (“Remember us”) or ‘Mi Chamocha’ (“Who is like You”) or ‘Uch’sov’ (“And inscribe”) or ‘B’seifer chayim’ (“In the book of life”), and you do not become aware of it until you said ‘Baruch Atah Hashem…’ (“Blessed are You, Hashem”), since you mentioned Hashem, you should conclude the bracha and continue the Shemoneh Esrei, and you need not repeat it. (Footnote #4: However, if you did not yet say the Hashem of the bracha, you may go back and say whatever you omitted.)

6) At the conclusion of the Shemoneh Esrei, some are accustomed to say ‘Oseh haShalom’ (“He Who makes the peace”), while others do not change, and say the usual text ‘haMevarech es amo baShalom; (“Who blesses His people Israel with peace”.) But in the Kaddish, we say ‘Oseh haShalom bim’romav…’ (“He Who makes the peace in His high heavens…”)

8) After the Maariv service on the first night of RH, it is customary for people to wish each other ‘Le’shana tova tikaseiv ve’seichaseim’ (“For a good year, may you be inscribed and sealed”) and to a woman you use the feminine form ‘tikaseivi ve’seichaseimi’, but do not extend these wishes in the daytime, because the writing has been finished before midday. On the second night, some have the custom of saying ‘Le’shana tova…’ (“For a good year etc.”), because sometimes we are judged on the second day. (Footnote #6: This is the opinion of the Taz; however, Eliyahu Rabbah argues against this and maintains that this blessing is not said on the second day)

9) At the evening meal it is customary to prepare symbolic dishes as auspicious omens for a good year: You dip the piece of challah of Hamotzi in honey, and after eating a ‘kezayis’ (olive-sized piece of challah you say: ‘Y’hi ratzon milfanecha, Hashem Elokai veilokei avosai she’techadesh aleinu shana tova u’mesuka’ (“May it be Your will to renew for us a good and sweet year.”) After this you should dip a piece of apple in honey, say the bracha ‘Baruch… borei pri ha-eitz’ (“Blessed… Who created the fruit of the tree”) and eat it. Then you say again ‘Y’hi ratzon...’
(Ed. At our table, we do not say “Y’hi ratzon after the challah and honey, only after the apple and honey. Many have the custom of eating other symbolic foods as well. The entire list of foods and their respective prayers can be found in the Artscroll RH Machzor pp. 98-99.)
